Amarone delle Valpolivella - Lamberti

Tenuta Pule is in the heart of Valpolicella, in the communes of San Pietro in Cariano, Negrar, Fumane and Marano. It covers an area of 130 hectares, partly vineyard and partly orchard, around the sixteenth century Villa Galtarossa, with a magnificent cellar of the period for the maturing of Veronese wines.
The Amarone della Valpolicella produced by Lamberti's oenologist with selected and dried grapes from Tenuta Pule, is a great red wine of very ancient tradition interpreted in a modern way. Intensely fruity, it is already enjoyable a few years after the vintage, but, thanks to its firm and powerful structure, it can be kept for a long time.
Grapes: 60% corvine, 30% rondinella and 10% molinara.
Vineyard: the most acclaimed parcels of Tenuta Pule, in the borough of San Pietro in Cariano; the vines are trained by the pergola, “cortina pendente” and spurred cordon, systems on clayey, limestone, stony ground well exposed to the south-west.
Vinification: towards the middle of October, before the normal vintage, the healthiest bunches (about 10% of all the grapes) are selected from the vineyard, picked by hand into 7 kg wooden boxes and left to dry naturally for 100 days in dry and well ventilated places; in January the dried grapes, with the juice very concentrated by dehydration, are vinified by the red wine method, with a long maceration and a controlled fermentation; the yield of wine is less than 40%.
Maturation: two years in oak casks; at the same time part of the wine ages for a year in French oak barriques; there follows a rest of 12 months in bottle before introduction for consumption.
Wine: dark ruby colour, with a garnet rim; full and complex bouquet of conserve, raisins and violets with hints of spices and balsam and a trace of undergrowth; rich, warm, powerful, balanced flavour with a well-defined and lingering aftertaste of dried fruits (peaches, grapes, plums) and toasted almonds.
Optimum keeping: more than 10 years in bottles stored horizontally in cool, dark conditions
Food matches: roast or braised red meats, game and strong cheeses.

Deriva da uve Corvina 65%, Rondinella 30% e Molinara 5% provenienti da vigne particolarmente vocate nei comuni “storici” di Negrar, Fumane e Marano. A fine settembre, prima della normale vendemmia, i grappoli più sani (circa il 15% del totale) vengono vendemmiati a mano e messi in cassettine da 7 Kg che sono lasciate ad appassire in appositi locali per 4 mesi fino a Febbraio. Poi le uve sono diraspapigiate e sottoposte ad una vinificazione che prevede differenti temperature di fermentazione e macerazione per ottimizzare l'estrazione dalle bucce. La resa in vino è del 40% contro il 70% abituale. Il vino matura per 3 anni in fusti di rovere di Slavonia, poi si affina per 6 mesi in bottiglia prima della commercializzazione.

ABBINAMENTO GASTRONOMICO: grandi formaggi stagionati, carni stufate, patè di cacciagione e cioccolato fondente.
