CABERNET SAUVIGNON

CABERNET SAUVIGNON

Synonym: Caberné

Historical Notes: this variety was originally French, again coming from the region of Bordeaux It arrived in Italy, almost at the same time as Cabernet Franc, and is said to have taken place around 1820 in a province of Alessandria. We have definite proof of its cultivation in 1870 in the Eugeani Hills, resting just outside the city of Padua (Veneto). In France, Cabernet Sauvignon enjoys the prestige of being the more widely cultivated of the two Cabernets; in Italy however it is the less frequently grown of the two, due to its lower Productiveness. Yet in some wine-growing regions of Italy, its popularity is slowly increasing, as vintners desire its milder grassy flavor and which turn, makes for finer wines which are generally more refined in character.

Characteristics: Large leaf with five lobes. Small to medium clusters, oblong, cylindrical-pyramidal, often with the presence of one side bunch, slightly compact. Berry of medium dimensions, sub-round. The grapes have a very thick, blue-black skin with violet nuances, with a rich bloom.

Vigor: good.

Productiveness: medium and constant.

Maturation: from the first of October to October 15.
